Abstract:Chlorogenic acid(CGA),an ester of caffeic acid and quinic acid,is a natural product widely used in pharmaceutical,chemical,food and other fields. This article is to review the research progress of chlorogenic acid,such as its physical and chemical properties,biological activity,synthesis methods and metabolism in vivo. The paper could serve as a reference for the research and the rational development and utilization of chlorogenic acid.

Abstract:This studyexplored the vascular endothelialdamages in the mice fed high-choline diet(3%),andthe possible vasoprotective effects of tea saponins in Gynostemma pentaphyllum(TSGP).After mice fed 3% high choline water for continuous8 weeks,the serumlevels of eNOS,NO and PGI2significantly reduced(p<0.01),while the serumlevels of ET-1 and TXA2 remarkably increased(p<0.01). Furthermore,the further histopathological observation by conventional H&Ealsosuggested thatvascular endothelialdamages vascularhappened in thoracic aorta after feeding 3% high-choline diet for 8 weeks. However,the TSGP remarkably ameliorated the aboveserum biochemical indexsand the histological section after treating with TSGP for 8 weeks(p<0.05,p<0.01). This results showing that high intake of dietary choline may inducevascular endothelial dysfunction,while TSGPexerted a significant protective effect on the choline-induced vascular endothelialinjury and isa kind of potential nutrients to prevent cardiovascular damage.

Abstract:A series of rice bran dietary fiber,which possess different physicochemical properties,were obtained by treating defatted rice bran with different concentrations of potassium hydroxide (KOH). The relationship between composition and physicochemical properties were discussed. Moreover,the effects of successive carboxymethylationon the physicochemical properties and subsequent influence on the α-amylase and lipase inhibition capacity of selected rice bran fiber were comparatively investigated.An increase in theoil binding capacitybut the decrease in the water holding capacitywith the incremental KOH concentration was observed,which was mainly due to the reduced hydration groups with the removal of starch,protein and partial hemicelluloses. The hydration capacities and oil binding capacity as well as the inhibiting capacities to lipase of rice bran dietary fiber were significantly enhanced after carboxymethylation.

Abstract:Onion juice concentrate generates insoluble substance after diluted by high temperature tap water. This study is to explore the formation of the insoluble substance and establish reasonable control method. The content of metal ions of iron,zinc,calcium and potassium in the onion juice concentrate which generates insoluble substance after diluted by high temperature tap water is significantly higher than the normal onion juice concentrate. The total phenolics,protein,flavones and reducing sugar contents of the abnormal onion juice concentrate are higher than the normal one. Normal onion juice concentrate which added calcium,zinc,iron and magnesium ions generate insoluble substance after diluted by high temperature tap water. A certain amount of citric acid,sodium citrate,ethylenediamine tetraacetic acid disodium and sodium hexametaphosphate were added to the abnormal onion juice concentrate and were diluted by high temperature tap water respectively. The results showed that the two treatment groups added ethylenediamine tetraacetic acid disodium and sodium hexametaphosphate didn't generate the insoluble substance. The optimum adding amount,respectively is 0.1 g/kg,3.0 g/kg diluent.

Abstract:In order to improve the hydrophobilicity of starch,lauric acid was grafted on starch through lipase-catalyzed reaction in ionic liquids. Firstly,the DS values of modified starch and their structure obtained in different solvent systems was detailed studied. Results showed that lauric acid could be successfully grafted on starch by Novozym 435 in all the selected systems. And therein,DS value of modified starch obtained in ionic liquids was much higher than the others. Secondly,the properties of modified starch were tested through water contact angle,DSC,viscosity and SEM. Results showed that the hydrophobicity of modified starch was significantly improved. DSC showed that melting temperature of modified starch was improved. In addition,viscosity and transmittance of the modified starch was slightly reduced accordingly. SEM showed that the surface morphology of starch particles was destroyed and became irregularly sheet structure during modification.

Abstract:A gene encoding a novel epoxide hydrolase (AuEH1),Aueh1,was amplified from the total RNA of Aspergillus usamii by RT-PCR technique and ligated with pET-28a(+),followed by transforming the recombinant plasmid,pET-28a-Aueh1,into E. coli BL21(DE3),forming an engineering strain E. coli/Aueh1. The recombinant AuEH1 (reAuEH1) was expressed in E. coli by IPTG induction. After the cells were disrupted by sonication,the supernatant was collected and used as the reAuEH1 solution. The analytical results indicated that the activity of reAuEH1 was 8.12 U/mL. The temperature and pH optima of reAuEH1 were 40 ℃ and 6.5,respectively. It was stable at a temperature of 40 ℃ or below,and at a pH range of 5~9. Its activity was not significantly influenced by EDTA and metal ions tested except for Ag+ and Cu2+. Under the conditions of 40 mmol/L potassium phosphate buffer (pH 6.5),20 mmol/L racemic styrene oxide ((R,S)-SO) and 0.8 U/mL reAuEH1,in a final volume of 6 mL,the hydrolytic resolution of (R,S)-SO was conducted at 35 ℃ for 50 min. The chiral product (S)-SO was obtained with a molar yield of 30.8% and an enantiomeric excess (e.e.) value more than 99%.

Abstract:Preparation of bone density-enhancing health food glucosamine chondroitin and calcium chewable tablets was studied. With flavor、taste and appearance as three indicators,response surface experiment was designed on the basis of single factor experiment,which combined with fussy comprehensive evaluation to determine the best formula. The optimized process parameters for chewable tablets was as follows:the content ratio of rawmaterial,mannitol,xylitol,lactose and milk powder was 100∶30∶10∶8∶16. Under this condition,the chewable tablets showed a smooth surface with uniform color,tasted delicate and sweet with unique milk flavor.

Abstract:Deoxynivalenol(DON) and Aflatoxin B1 are the most prevalent mycotoxins in cereal-based ingredients or foods and they frequently coexist. HepG2/C3A cell treated with different concentrations of DON(0.56、1.125、2.25、4,5、6.75 ?滋mol/L) and AFB1(2.5、5、10、20、30 ?滋mol/L) for 24 h was used to analyze their toxic effects expressed by cell proliferation inhibition rate(SRB),total double-stranded DNA,apoptosis rate,cell cycle arrest and apoptosis-related gene,caspase-3,Bax,Bcl-2 were analyzed by real-time quantitative PCR .The results showed that their co-effect was classified as being additive. Flow cytometry assay on the rate of apoptosis also shown an additive interaction which could indicated that these two toxins could induced apoptosis and they also induced cycle arrest in S-phase or S,G2/M- phase. The increase of expression of caspase-3 and Bax as well as the decrease of Bcl-2 further support their additive toxic effect. RNA-Seq analysis showed different cytotoxicity mechanism between AFB1 and DON that AFB1 and their combination effect induce cell apoptosis mainly through P53 pathway while not for DON. We guess AFB1 and DON may through different pathway to induce cell apoptosis together.

Abstract:Extract poiysaccharides from Rosa multiflora Thunb(RMTP) by ultrasonic-microwave-enzyme synergistic extraction method. Based on single factor experiments,response surface methology was combined to optimize the process,and test its in vitro antioxidant activity in a chemical way,and compared with the antioxidant activity of VC. Results showed that optimal process conditions to extract Rosa multiflora Thunb polysaccharides were :the amount of enzyme added was 1.15%(enzyme activity was 40 U/mg),pH value was 5.72,extraction temperature was 81.19 ℃ and the ratio to liquid was 12.56∶1(mL/g),at this conditions,actual yield of Rosa multiflora Thunb polysaccharides was 10.48 mg/g,it conforms to prediction results of the model(10.63 mg/g). The results of antioxidant activity showed that the polysaccharides from Rosa multiflora Thunb had strong antioxidant capacity. The polysaccharides from Rosa multiflora Thunb had weaker antioxidant activity than VC.The antioxidant activity and polysaccharide content in certain concentration ranges were related.

Abstract:The salted egg white was used as raw material,the most appropriate enzyme was chosen from five kinds of enzymes to hydrolyze the salted egg white with two indexes:degree of hydrolysis(DH) and content of peptide(PC). The impacts of enzyme amount,initial pH,temperature and time on DH and PC of enzymatic hydrolysis of the salted egg white were studied by single factor experiments. The response surface methodology was used to optimize the enzymatic hydrolysis technology and DH was certified under the condition. The optimal technological conditions were determined by this study as follows:papain was added with the concentration of 4%(E/S),the initial pH of the diluted salted egg white solution was better to adjusted to 4.0,and the hydrolysis reaction was conducted at 60 ℃ and under this condition DH was 18.41%,which can prove the validity of the mathematical model of the response surface optimization.

Abstract:In order to improve the water solubility of curcumin(CCN),curcumin-cyclodextrin inclusion complexes(CCIC) were prepared and the preparing process was optimized. The CCIC was prepared by grinding method. Microscopic observation method,differential scanning calorimetry,and infrared spectroscopy method were used to validate the formation of the CCIC. The orthogonal design was used to optimize the preparation process of CCN. Solubility was a evaluation index. The optimal condition of these three effects to prepare CCN were that the inclusion of feed ratio was 1∶1,the grinding temperature was 40 ℃,the inclusion time was 1.5 h. The solubility of CCN in inclusion complex prepared by optional condition was(1.72±0.03) mg/mL which increased 3.82×104 times compared with free drug. The process was stable and feasible. The preparation process was repeatable and reasonable. It effectively improved the solubility of CCN in the water.

Abstract:In order to obtain alkali-stable β-glucosidase and study its enzyme characterization,an alkali-stable strain Bacillus altitudinis SYBC hb4 was screened and isolated from native honey. Based on the β-glucosidasecoding sequences from Bacillus altitudinis SYBC hb4,design up and downstream oligonucleotide primers were designed,and the target gene(bglA) was amplified by using PCR.The expression vector pColdII-bglA was constructed by subcloning the target gene into plasmid pColdII,and then transformed into E. coli BL21(DE3)for heterogeneous expression.The expression β-glucosidase acticity reached to 12.40 U/mL. The optimum temperature and pH of the recombinant β-glucosidase were 60 ℃ and 8.0,respectively. And 5mmol/L Mg2+ could increased 50% β-glucosidase activity.

Abstract:The present study investigated the immunomodulatory potential of Pleurotus eryngii different polar extracts(PEs) in mice macrophage cell Ana-1,Ana-1 cell proliferative rate were analyzed by MTT assay,cell Ana-1 cytokines secretion(TNF-α and IL-6) were determined by Elisa reaction kit in different extracts concentration and different stimulation time,cell phagocytosis ability was detected by neutral red assay,Toll-like receptors(TLR2 and TLR4) were assayed by Elisa reaction kit. The results showed that,the PEs respectively were shown to be promoter on growth of Ana-1 cell proilferation,in varying degrees. Methanol extracts(PEM) showed the highest promoting Ana-1 cell proliferative activity and cytokines secretion(TNF-α and IL-6). In concetration of 12.5 μg/mL,the cell proliferative rate and cytokines secretion were reached peak value. After the stimulation by the 12.5 μg/mL PEM,TNF-α reached secretion peak in 12 h and IL-6 reached secretion peak in 24 h,respcetively. Furthermore,PEM could stimulate Ana-1 cell to promote the phagocytosis ability and increase the expressions of TLRs signaling molecules(TLR2 and TLR4). In conclusion,PEM has significant immunity-stimulating effects by promoting macrophage cell proliferation,inducing cell cytokine secretion and promoting phagocytosis ability.

Abstract:In this experiment,Tricholomamatsutake condensed oral liquid were used to feed the mice to research their immunity,antioxidant activity,anti-fatigue function.Female mus musculuswere randomly divided into four groups,12 mice in each goup.Two groups of miceadministeredsterile saline. The other two groups which every mouse received gavage of 0.02 mL/g(the volumeof oral liquid/weight of mouse) tricholomamatsutake condensed oral liquideveryday.The index which about immunity,antioxidant,anti-fatigue activity were determined after 7,14,21 d feeding.when administered 21 d thymus index improved by 26%,spleen index increased by 9.1%,serum IgG levels increased by 11% to improve macrophage phagocytic capacity by 51% ,the difference was significant(P<0.05);antioxidant test,and normal saline group phase compared with the increase of the number of days gavage,MDA concentration declining,SOD activity is rising,when administered 21d MDA content decreased by 57%,SOD content has increased by 11% ,the difference was significant(P<0.05);fatigue detection ,compared with the normal saline group,with the increase in the number of days gavage,swimming time improved by 39%, and blood urea nitrogen and serum lactate levels were reduced by 29% and 49%.Tricholomamatsutake condensed oral liquid can improve mice immunity,antioxidant activity,anti-fatigue function in varying degrees.

Abstract:Fatty acid has an important effect on meat quality. In the present study,the composition and content of fatty acid from different position of yak meat are analyzed by GC-MS to evaluate the quality of meat among neck,sirloin,highrib and knuckle. The results demonstrated that highrib has the highest level of saturated fatty acid while the lowest is knuckle,and the difference were significant(p<0.05). For unsaturated fatty acid,there is significant difference between knuckle and neck(p<0.05),with highest level in knuckle. The ratio of polyunsaturated fatty acid/saturated fatty acid is an important indicator for meat quality evaluation,and the difference between sirloin and knuckle is significant(p<0.05). n-6/n-3 ratio has no difference among the other positions except neck. In conclusion,some recommendations can be provide on processing to extend shelf life according to the analysis and evaluation of the quality of different positions from the nutritional point of view.
