Abstract:油脂脱色体系属于稀溶液吸附体系,该体系中的吸附等温式最常用的是Langmuir方程和Freundlich方程,其中Freundlich方程更适合植物油脂脱色体系。作者对植物油脂脱色工艺中常用的3种吸附剂进行了研究,结果表明:在低浓度区时3种吸附剂都符合Freundlich吸附等温方程,K凹〉K膨〉K活,N凹〉N膨〉N活。凹凸棒石的K值和N值均为最大,大孔径范围的孔道和较多的表面酸性点使凹凸棒石不仅具有较强的吸附能力,而且具有较高的吸附强度。

Abstract:以小麦、燕麦和玉米粉为主要原料,以脆性和保脆性为主要指标,通过均匀设计得到挤压工艺中对品质影响较大的3个因素及其取值范围。再通过响应面分析对谷物早餐的挤压工艺进行优化,得出最佳的挤压工艺为:螺杆螺旋速度为334r/min;Ⅰ区温度为40℃;Ⅱ区温度为150℃;Ⅲ区温度为123.50℃;水分质量分数22.60%;蛋白质质量分数7.3%;脂肪质量分数8%。

Abstract:摘要:包装内气氛与包装材料选择性透气性是影响果蔬气调包装质量的主要因素。对青豌豆采用6组不同初始气体组分、3种包装材料进行气调包装,在5℃,相对湿度85%的环境下贮藏7d后,测定青豌豆的相关质量指标,并与未包装产品进行比较,结果表明气调包装对青豌豆保鲜效果显著;在此基础上,用主成分分析法构造了气调包装产品质量的综合评价模型,对气调包装青豌豆质量进行综合评价,得出青豌豆气调包装的最佳初始气体组分,分析了不同包装材料对青豌豆气调包装质量的影响。

Abstract:研究了芦笋复合汁的加工工艺和配方。在热烫加工中,选用了100℃、30s的工艺条件。通过正交试验确定纤维素酶酶解最佳工艺:纤维素酶质量分数0.08%,pH值为5,温度40℃,酶解时间30min。利用果胶酶提高芦笋汁的澄清度,果胶酶质量分数为0.06%。用橙汁与芦笋汁复配,最佳配方为:果蔬汁体积分数为30%,其中9份为芦笋原汁,1份为甜橙原汁;糖用量(质量分数)为9%,酸用量(质量分数)为0.2%,香精用量(质量分数)为0.3‰。

Abstract:采用高碘酸氧化、Smith降解、甲基化分析、部分酸水解、^1H—NMR和^13C—NMR等方法对亚麻籽胶中的NFG-1的结构进行研究。结果表明:NFG-1的主链主要由木糖和葡萄糖组成。大部分阿拉伯糖和部分木糖位于NFG-1的侧链或末端;木糖主要以1→4位键合为主,并存在少量的1→2位键合和1→3位键合,约有1/3的木糖位于非还原末端;葡萄糖主要以1→6或1→2位键合为主;阿拉伯糖有1→4、1→2、1→3位键合,有1/3的阿拉伯糖位于非还原末端;半乳糖存在1→4或1→6位键合,约有1/5位于非还原末端。木糖是β-型,葡萄糖、半乳糖和阿拉伯糖均为α-型。

Abstract:从内蒙古呼伦贝尔草原的盐碱湖中分离到的一株低度嗜盐嗜碱细菌Bacillus sp F26,能积累高水平过氧化氢酶(CAT)。对Bacillus sp F26发酵产过氧化氢酶的环境与营养条件的研究结果表明,其积累高水平过氧化氢酶的适宜环境条件为:温度37℃,种龄20-22h,接种量5%,装液量50mL/(250mL的摇瓶)。适宜发酵培养基组成(g/L)为:葡萄糖15,牛肉膏10,玉米浆10,酵母膏5,磷酸二氢钾1,氯化镁0.2,氯化钠50,碳酸钠10。采用上述条件进行摇瓶分批发酵实验,发酵20h,过氧化氢酶酶活达到16.32U/mL,细胞干重为4.12g/L。进一步研究发现,在对数生长后期(16h)添加2mmol/L的H2O2可以明显刺激产酶,在5L的发酵罐上进一步以指数速率方式流加H2O2,由于该流加方式可降低H2O2对细胞的毒害作用,过氧化氢酶酶活达到29.89U/mL,与分批发酵相比提高了92.8%。

Abstract:从温泉热源地区采集的大量泥土和水样中,筛选出一株在60℃生长的纤维素酶产生菌SH2。结合菌株的生理生化特性分析与Biolog微生物自动鉴定仪的鉴定结果,命名为热葡糖苷酶地芽孢杆菌(Geobacillus thermoglucosidasius)SH2,该菌株兼性好氧,在45~60℃能较好地生长。对菌体生长与产酶培养条件优化表明:初始pH值为5.5,碳、氮源分别为蔗糖和玉米浆时有利于产酶,经48h发酵后纤维素酶酶活达0.36IU/mL。纤维素酶反应条件研究表明,该纤维素酶的最适pH值为6.0,在pH4.0~10.0范围具有较强的耐受性;在45~65℃间酶活差异仅在5%之内,显示了很好的温度耐受性。

Abstract:从番茄果实表面分离到一株陆生伊萨酵母(Issatchenkia terricola),它在几丁质诱导下能产生较高活性的几丁质酶。采用硫酸铵盐析、DEAE-纤维素(DE32)离子交换柱层析、SephadexG-100分子筛柱层析,获得了凝胶电泳均一的几丁质酶。用SDS-PAGE测得该酶的相对分子质量为42400;以胶体几丁质为底物的Km和Vmax分别为6.91mg/mL和12.95μmol/min;该酶反应的最适温度和最适pH值分别为50℃和7.0。在50℃条件下,酶蛋白在pH5.0~9.0较为稳定;抗菌活性实验表明,该酶对供试病原菌有不同程度的抑制作用。

Abstract:研究了一种L-抗坏血酸脂肪酸酯(AFAE)合成新途径。实验结果表明,氢化棕榈油、大豆油和海狗油等食用油脂作为脂肪酸基团供体,在固定化脂肪酶的催化下,在有机溶荆中与L-抗坏血酸直接进行酯交换反应形成L-抗坏血酸脂肪酸酯。对反应介质体系的筛选发现,在叔戊醇中用Novozym435催化此反应所得的产物浓度最高。对影响合成抗坏血酸脂肪酸酯的因素进行了探讨,确定了最适反应条件:初始油脂底物浓度为200-600mmol/L,温度为55℃,反应时间为9h。此条件下产物质量浓度可达43.51g/L。

Abstract:以对棉铃虫高毒力的苏云金芽孢杆菌35作为研究菌株,采用正交试验法及生物测定验证法,对该菌株发酵培养基进行了优化实验。获得了优化培养基(棉籽饼3.25g/dL、玉米粉1.4g/dL、麸皮1.2g/dL、KH2PO40.11g/dL、FeSO40.0049g/dL)。该培养基与对照培养基相比,发酵液含菌数高达40.8×108cfu/mL,比对照培养基提高了63.7%;发酵液毒力高达66.1%,比对照培养基提高了81.5%。

Abstract:应用AKTA explorer 100型中压液相色谱快速纯化工艺,系统分离纯化了脆壁克鲁维酵母(Kluyveromyces fragilis)β-D-半乳糖苷酶。K.fragilis发酵生产的菌体细胞经过破碎、离心后的上清液中含有K.fragilis β-D-半乳糖苷酶。粗酶经过AKTA explorer 100中压液相色谱的Hiprep^R 16/10 Source 30Q强阴离子交换柱和Hioad26/60 Superdex凝胶过滤色谱连续两步纯化,酶的回收率为27%,纯化倍数为42。纯化的K.fragilis β-D-半乳糖苷酶在垂直板十二烷基硫酸钠聚丙烯酰胺凝胶电泳(SDS-PAGE)上,呈现一条染色谱带,表明纯化的酶具有较高的纯度。K.fragilis LFS-8611 β-D-半乳糖苷酶相对分子质量约为60 000。
