Abstract:分别以2、4、6℃作为预冷终温对草莓进行真空预冷,以不预冷草莓为对照试验,研究了不同预冷终温对草莓生理生化变化的影响,并记录了草莓预冷过程中果实表面温度、内部温度及真空压力(绝对压力)的动态变化。结果表明,真空预冷能抑制草莓呼吸强度和电导率的增加,对减缓维生素C(VC)、花色苷的降解也有一定作用,但对可滴定酸及可溶性固形物影响不大。

Abstract:利用PCR技术从大肠杆菌(既cherichia coli)中扩增出1.16kb的编码1,3-丙二醇氧化还原酶同工酶的基因yqhD,将其连接到温控表达载体pHsh,得到重组哉体pHsh-yqhD,重组载体在大肠杆菌JM109中得到高效表达。SDS-PAGE分析显示:融合表达产物的相对分子质量均为43000,同核酸序列测定所推导的值相符。对含有yghD的基因工程菌进行表达研究表明:42℃诱导4h,1,3-丙二醇氧化还原酶同工酶的酶活力达到100IU/mg,而对照菌株的酶活力仅为0.5IU/mg。

Abstract:对乌饭树树叶中提取出的色素进行了分离纯化,分离出了4种黄酮类物质。并且对这4种物质清除活性氧自由基的能力进行了研究,发现乌饭树提取物都具有很强的清除自由基能力,清除能力最强的槲皮素和6#提取物的IC50达到了5.9μg/mL左右。

Abstract:直接用木瓜蛋白酶水解软骨,三氯醋酸除蛋白质,乙醇沉淀干燥得硫酸软骨素粗多糖,经DEAE-Sepharose fast flow离子交换层析分离纯化,高效凝胶渗透色谱和琼脂糖凝胶电泳测定其相对分子质量和纯度,比较硫酸软骨素粗品和纯品的体外自由基清除活性。结果显示硫酸软骨素粗品和纯品提取率分别为31.56±0.46%和19.79±0.78%,后者相对相对分子质量为75 174,粗品的DPPH.和.OH清除活性最强,随着产品纯度的提高,活性降低,而对于O2-.清除活性结果则相反。

Abstract:油胶囊的主要成分为二十八烷醇、VE和亚油酸,作者对其安全性毒理学进行评价。结果表明:油胶囊对SD大鼠、昆明小鼠的急性经口LD50均大于10 g/(kg.bw),判属实际无毒类;A-mes试验、小鼠骨髓嗜多染红细胞微核试验和小鼠精子畸形试验等3项遗传毒性试验均为阴性,表明该受试物无致突变作用;在大鼠30 d喂养试验中未见动物健康状况、生化、血液学指标和器官组织形态的异常变化,据此初步估计该产品的最大无作用剂量大于2.5 g/(kg.bw)(人体推荐摄入量的150倍)。

Abstract:通过试剂筛选,以无水乙醇为漫提剂,研究了不同条件对苜蓿浓缩叶蛋白脱色、脱腥的影响,通过正交试验得出了脱色的最佳工艺条件:液固体积质量比6mL:1g,浸提温度85℃;浸提时间4h;浸提级数3级。此工艺参数的确定为苜蓿叶蛋白的脱色、脱腥提供了新方法,提高了苜蓿浓缩叶蛋白在食品中应用的可行性。

Abstract:通过不同工艺路线制备了相应的交联酯化冷水可溶淀粉,分别称为a、b、c淀粉,对它们的性质作了对比研究,结果发现,不同的工艺路线制备出的淀粉性质存在差异。a淀粉交联度最高,酯化取代度最低,在冷水中容易分散,形成的糊的粘度热稳定性好,但透明度差,容易凝沉;c淀粉交联度最低,酯化取代度最高,在冷水中不易分散,形成的糊的粘度热稳定性差,但透明度好,不易凝沉;b淀粉性质居于两者之间。

Abstract:研究了谷氨酰胺转移酶(TGase)对大豆蛋白膜特性的影响。研究表明:在成膜溶液中加入TGase(4U/g)可以使膜的抗拉强度增加16.79,6,表面疏水性增加39.2%,同时也明显降低了膜的断裂伸长率、水分含量、总可溶性物质量及透光率,但是对水蒸气转移速率几无影响。扫描电镜(SEM)显示,酶法交联膜的表面比对照膜略为粗糙,断面却更为均匀致密。SDS-PAGE分析表明,TGase催化SPI产生了共价交联。

Abstract:探讨了葡萄糖、乳糖、氯化钠、麦芽糊精复合使用对高含水率脱水菜心水分活度的降低作用,研究了不同包装条件、不同贮藏温度对高含水率脱水菜心贮藏稳定性的影响。结果表明,较佳的水分活度降低剂组合为:葡萄糖质量浓度8g/dL,乳耱质量浓度4g/dL,氯化钠质量浓度2g/dL,麦芽糊精质量浓度7.5g/dL。真空包装和避光包装可减小高含水率脱水菜心擘藏中叶绿素和抗坏血酸的损失,减缓褐变的产生;4℃贮藏可以较好地保持高含水率脱水菜心的品质。微生物实验表明,水分活度为0.69-0.70的高含水率脱水菜心可以安全贮藏。

Abstract:以方格星虫(Sipunculus nudus)体壁和血液为试验材料,经胰蛋白酶水解,Sevage法去除蛋白质,乙醇沉淀得到粗多糖,透析并冷冻干燥后分别得到方格星虫体壁多糖(SWP)和血液多糖(SBP)。经凝胶渗透色谱分析,SWP和SBP均为单一组分,相对分子质量分别为284528和198212。红外光谱分析表明,两种多耱结构相似,不含硫酸基团,均含有葡萄耱、半乳糖、木糖和阿拉伯糖。SBP含有乙酰氨基,而SWP不含乙酰氨基,它们是以α-糖苷键或β-糖苷键连接的呋喃多糖。
