Abstract:用硬脂酸凝胶法工艺合成不同配比的α Fe2 O3 K2 O B2 O3复合氧化物超微粉 ,经液相烧结法制得多孔陶瓷材料 .采用XRD技术、Archimede排水法及压汞法等研究了材料物相、晶粒度及微孔结构 ;电导测试实验表明 ,B2 O3掺杂相可能以非晶态均匀包覆在主晶相晶粒表面及晶界处 ,K 被吸收包埋在B2 O3非晶相中 ;湿敏特性测试结果表明 ,硼掺杂 5% (摩尔分数 )左右 ,全湿区内材料阻 湿特性曲线线性关系良好 ,且感湿灵敏度较高、湿滞小 ,改变掺杂配比 ,可获得不同湿敏转变点的阻 湿特性曲线 ;初步探讨了材料多孔结构与湿敏性能之间的关系 ,得出通过硼掺杂调控材料微结构 ,可明显提高材料湿敏性能稳定性的结论 .

Abstract:HPLC分析研究了产甘油假丝酵母 (Candidaglycerolgenesis)发酵过程中有机酸的种类和含量变化 .C .glycerolgenesis主要在菌体生长期产生有机酸 ,使发酵液总酸增加 .确定了发酵过程形成的有机酸含有乙酸、乳酸、丙酮酸、酮戊二酸、苹果酸等 .建立了HPLC测定有机酸的方法 .分析发现 :有机酸中乙酸质量浓度最高约为 1.6 g/L .随着发酵时间的延长 ,发酵液总酸含量逐渐下降 ,而乙酸和α -酮戊二酸在发酵后期有所回升 .

Abstract:用Brabender粉质仪及拉伸仪研究分析了香菇膳食纤维对面团流变学性质的影响 .结果表明 :香菇膳食纤维对面团流变学性质的影响随添加量及处理条件不同而不同 ;纤维添加延长了面团形成时间 ,增加了面团吸水率 ,减少了面团稳定时间 ;当添加量小于 4 %时 ,挤压处理对粉质特性的影响不明显 ,当添加量大于 1 0 %时 ,挤压处理对粉质特性的影响较大 ;当添加量在 1 %～ 2 %左右时 ,对面团拉伸特性有改善作用 .

Abstract:通过对 2 0 %油 /水乳浊液分层特性的测定 ,讨论了加热处理对黄原胶稳定乳浊液的性能的影响 .黄原胶水溶液预先被加热到一定的温度 ,然后再加入到乳浊液体系 ,结果发现 ,加热后的黄原胶能在更宽的浓度范围内引起乳浊液分层 .加热到 90℃的样品 ,欲实现完全的稳定效果 ,黄原胶的用量相对于未经加热的样品要加倍 ;即使在 90℃下只热了 7min ,0 .3 %的黄原胶也会导致体系发生分层 ,而且受热时间越长 ,引起的分层越严重 .黄原胶的这种性质被归结为在热处理中分子的构象从有序的螺旋状缔合态转变成了无序的、依据受热时间不同而解聚程度不同的线团状 ,因而改变了体系的流变学性质和黄原胶导致的‘排除’作用力的大小 ,结果改变了乳浊液的分层性质 .
