Abstract:将苹果渣和苹果纤维添加至焙烤蛋糕的面粉中,测定了蛋糕粉湿面筋含量和浆料粘度的变化。探讨了对蛋糕的比容及老化的影响,结果表明:苹果渣和苹果纤维会引起面粉持水性的改变。苹果纤维同面粉混合后的总持水性,常温下为两者的线性之和;纤维的添加能导致湿面筋含量的下降,下降幅度同纤维的含量有关。表观粘度系湿面筋的形成能力与纤维持水性两者的综合效应。该结果有助于进一步研究纤维同小麦面筋之间的相互作用并为蛋糕品质的改善提供了实验依据。

Abstract:紫草(Perilla frutescens)悬浮培养细胞在胞内产生并积蓄花青苷(红色素)。通过实验发现用一些渗透剂如甲苯、氯仿、聚乙二醇辛基苯基醚(Triton X—100)、二甲亚砜(dimethylsulfoxide)、醋酸和乙醇等处理培养细胞,可使细胞内的红色素释放出来。培养的紫草细胞一般在含3%蔗糖浓度的LS培养基中生长,当提高蔗糖浓度至4.0%~4.5%时,细胞生长量及色素的产量均有增加。实验结果表明,蔗糖浓度的提高不仅可以增加碳源,而且更重要的原因还可能是蔗糖渗透压的影响,在高糖浓度也即高渗透压下,细胞红色素的渗透性有所增加。

Abstract:研究了国产小麦粉各品质因素对甜酥性饼干品质的影响,结果表明,面筋的质和量均有重要影响,细度和损伤淀粉对甜酥性饼干品质有着显著影响,而α-淀粉酶活力对甜酥性饼干品质则无显著影响。可以用面团流变学试验中的形成时间、稳定时间和评价值、拉伸阻力和延伸性等指标来评价饼干专用粉的品质和甜酥性饼干专用粉的质量指标。
