Abstract:本文研究了中华猕猴桃蛋白酶的一些性质和它在配制肉类嫩化剂中的应用。此酶对两种不同的底物具有两种不同的最适pH,即以酪蛋白为底物时,最适pH为5.0~6.5,而以笨甲酰精氨酸乙酯(BAEE)为底物时,最适pH为7.5。在pH4.0~10.0范围内,酶能保持稳定。在65℃热处理16分钟,酶活力残存50%。将此酶配制成肉类嫩化剂处理牛肉,其蛋白萃取液中总可溶性含氮及可溶性非蛋白氮含量均比对照样品高,其脯氨酸甘氨酸含量也有明显的增加。这表明猕猴桃蛋白酶对肌肉组织中的胶原蛋白和弹性蛋白产生了一定作用。流变性质试验也表明该嫩化剂是有效的。
