    Abstract:

    In order to study the effect of chitosan / gelatin / monoglyceride composite coatings on the freshness of fruits and vegetables. Chose mini-cucumbers as test material. Researched the effects of MAP and combined technique on weight loss,respiration rate,chilling injury index,MDA content,cell membrane permeability,Vc content and water status of mini-cucumbers. The results showed that chitosan composite coatings combined with modified atmosphere preservation technology was superior to single atmosphere preservation technology,which promoted the quality of vegetables and reduced the occurrence of chilling injury,and extend the shelf life to 25 days at 8 ℃.
