    Abstract:

    A new method for the production of high-purity isomalto-oligosaccharides(IMO) by the lactic acid fermentation using probiotic strains was demonstrated. With the addition of betaine and the fermentation of sugars such as glucose,fructose and maltose into lactic acid by probiotics,the low-purity IMO-50 was effectively converted into the high-purity IMO-90. There was no need to separate the strains after conversion. The method is an easy way to manufacture edible products.
