Proteomic Analysis of Protein Induction in Lactobacillus paracasei by Salt Stress Using Two-Dimensional Electrophoresis

    Abstract:

    Lactobacillus paracasei LN-1 with salt tolerance property was isolated from traditional fermented food,suancai,which was made in the northeast of China. In order to understand the mechanism involved,proteomics analysis was undertaken to reveal the response of the strain during growth in medium with or without NaCl using two-dimensional electrophoresis(2-DE). Out of 20 protein spots that showed differential changes in expression,seven spots were identified by matrix assisted laser desorption and ionization time-of-flight mass spectrometry(MALDI-TOF/MS). Further analysis showed that chaperone protein(GroEL and DnaK) and fatty acid biosynthesis enemy(Fab G) possibly play important role in Lactobacillus paracasei LN-1 to resist to salt stress.
