    Abstract:

    This paper described the physiological characteristic, storage properties of the fruit and vegetable postharvest and advanced preserving technology in the world, mainly emphasized on the characteristics and significance of various types of preservation technology. Some common problems emerged during the preservation and developments in the future were discussed.
