    Abstract:

    In order to explain the oxidation resistance ability of polyphenol from Ampelopsis grossedentata,this manuscript take Vc as the comparison,the reducing power,the ·OH and O2-· eliminate ability of polyphenol from Ampelopsis grossedentata were investigated.The results demonstrated that the ampelopsis grossedentata polyphenols could eliminated OH and O2-·.With the same concentration,the ampelopsis grossedentata polyphenol had stronger ability than that of Vc for elimination OH and O2-·,the half of suppression rate IC50 is 159.09 μg/mL and 30.97 μg/mL,respectively.The above results strong suggested that the ampelopsis grossedentata polyphenols is one kind of good natural oxidation inhibitor.
