    摘要:

    为了明确食品及食品包装材料、食品的生产坏境中污染霉菌菌株种类,本文对收集、单孢分离的55株霉菌菌株同时采用形态学和分子生物学方法鉴定,并相互验证。实验结果表明:55株污染霉菌主要包括有曲霉属(Aspergillus sp.)、镰刀菌属(Fusarium sp.)、青霉属(Penicillium sp.)、枝孢菌属(Cladosporium sp.)、链格孢属(Alternaria sp.)等,这为食品中霉菌污染的安全控制和菌株溯源提供了有价值的参考信息。

    Abstract:

    In order to unveil the population structure of the mold strains which may cause contamination in food and their production environments and packing materials,the 55 isolates were first collected and mono-spore purified from the collected samples,and then the morphological and molecular characterization means were both conducted to identify the mold strains to the species level. The experimental results have indicated that the 55 isolates of mold species identified mainly include AspergillusFusariumPenicilliumCladosporium and Alternaria species,etc. These achieved data would be valuable references for safety control and monitoring of contamination of mold species.
